Diablo’s Cantina does an excellent job of mixing traditional Mexican food with Las Vegas ingredients to create a unique menu all patrons will enjoy. Whether you’re in the mood for tacos or fajitas, Diablo’s has it all. Below is a complete review of the menu sections and what you can expect from each one.

The Menu at Diablo’s Cantina in the Luxor

Diablo’s Cantina Menu – Luxor Las Vegas

Starters

You don’t have to look far in the menu to see the Mexican food standards that people have come to love at the cantina. At Diablo’s, you can start your meal off with classics such as classic guacamole and chips or the Queso Fundido served with warm flour tortillas and pico de Gallo. Other choices include Chicken Taquitos and Aguachile Shrimp Ceviche. The Nachos are perfect for sharing with a large group and you can add chicken, steak, or shrimp. Prices range from $11 to $18 for all apps unless you are adding extras, then prices will increase.

Soups and Salads

Although you don’t have a ton of salad and soup options at Diablo’s, the ones you do get are uniquely Mexican and aren’t featured at most other restaurants on the strip. The Chicken Pozole is your only soup selection and it comes with shredded chicken, cabbage, spiced, and a guajillo broth.

Your salad options start with the Vixen Salad which is packed full of Mexican ingredients like roasted corn, queso fresco, and citrus-chipotle vinaigrette. The last choice for salads is a unique take on the classic Caesar adding in some southwest baja flavors like pickled onions, chili-lime dressing, and cotija cheese. Prices are all $11 but you can add proteins to any salad for an additional cost.

Tacos

You’ll get street-sized tacos at Diablo’s Cantina but there will be three of them to make sure you get your fill. There are over six different taco choices and each one is expertly prepared with a special blend of ingredients.

The Filet Alambre Tacos are one of the must-haves but so is the Roasted Chicken Al Pastor.

You actually can’t go wrong with any of these delicious options like the Pork Carnitas, Rajas and Mushroom, or Baja Style Fish. Prices range from $16 to $29 depending on which ones you choose.

Burritos and Enchiladas

A couple of different burrito options will more than fill up your hunger cravings. The Shredded Chicken Burrito and Shredded Beef Burrito both come with a flour tortilla and other fresh ingredients like cheese, lettuce, pico de gallo, and crema fresco. The only difference is the Pasilla sauce in the beef and the tomatillo cream sauce in the chicken.

The enchiladas are the real star of the show and you get four different options including Chicken, Veggie, Beef Barbacoa, and Shrimp. If you can’t decide on what you want, you can always take on the Diablo’s Enchilada Platter which comes with beef, chicken, and shrimp enchiladas. Prices are anywhere from $21 to $31.

Entradas & Fajitas

All of the main entrees, including the fajitas, come with a side of rice and beans. You might not need it though with the size of portions served at Diablo’s. The Trio Fajitas is ideal for groups looking to share the different kinds offered like chicken, steak, and shrimp.

Otherwise, you’ll see a list of popular Mexican food choices like the Grilled Shrimp Quesadilla, Carne Asada Steak, and Pork Carnitas Skillet. You can even get a Mexican-flavored Glazed Salmon if you’re looking to mix it up. You’ll pay slightly higher for this section with prices ranging from $22 to $39.

Desserts

Diablo’s Cantina keeps it simple when it comes to desserts. A traditional Mexican Flan with caramel sauce, Churros with ice cream, and Bunuelos provide all the sweetness you need when rounding out your meal. The flan and churros are $9 while the bunuelos is $10.

Drinks & Cocktails

Margaritas are where you want to keep your focus when deciding which drink to unwind with. You’ll get a range of flavors from cucumber and passion fruit to hibiscus and mango and there’s even a section for frozen margs versus on the rocks.

There are plenty of domestic and Mexican beers as well as a handful of wines. There are even five different cocktails you’re probably familiar with like the Paloma, Mojita, and sangria. For a Mexican twist on an American classic, try the Mezcal Old Fashioned.
