The Menu at Mott 32 Las Vegas

Mott 32 Restaurant Menu – Palazzo Las Vegas


While you won’t typically start your meal with a BBQ selection, this menu section comes first because it requires you to pre-order in advance. 

The Signature Apple Wood Roasted Peking Duck is what Mott 32 is known for. They use a 48-hour air-drying preparation process, and it is freshly roasted when you arrive. A unique carving technique ensures all its tasty juices get locked inside, so it’s no wonder people flock to this dish. Served with steamed pancakes, scallions, thinly sliced cucumbers, raw cane sugar, and a special house-made hoisin sauce, this selection provides a royal feast for three or four guests. It costs $128 or $238 if you add Bjork caviar. 

If you can’t reserve a Peking Duck, you may be able to score one of their other amazing BBQ dishes, including Peking Style Spicy Crispy Duck Rack, Minced Duck Fried Rice, or Barbecue Iberico Pork. However, pre-ordering is still advised. 


Mott 32 offers an array of unique starters that can’t be found on your typical Chinese menu. From Jellyfish with black fungus and black vinegar to Cold Free Range Chicken with coriander and black truffle, you’ll be pleasantly surprised with every bite.

I recommend the Shredded Peking Duck Salad with beetroot, crispy taro, and a mouth-watering citrus truffle dressing. They also have various crispy seafood dishes, Crispy Air-Dried Angus Beef, and more.

Dim Sum

The dim sum menu portion is divided into three categories, steamed, baked, and fried, so you can easily cater to specific preferences. In the fried section, you’ll find spring rolls, one with shredded Peking duck and mushroom and another with assorted wild mushrooms. 

If you want to sample all the best Mott 32 offers, the baked Signature Crispy Sugar-Coated Charcoal Pork Buns are a must-try. The steamed selections include five tender, flavorful dumplings with various fillings. It also features another fan favorite, Soft Quail Egg with Iberico pork and black truffle Siu Mai. 

Soup and Bird’s Nest 

The soups and authentic bird’s nest dishes at Mott 32 are priced per person. Even if you don’t typically order soup, you’ll want to try one of these. In addition to classics like Hot & Sour Soup, they also prepare a collection of inspired options like Buddha Jumps Over the Wall and Pearl Meat Soup. 

If you’ve never tried an authentic Chinese bird’s nest, or even if you have, I strongly recommend getting one at Mott 32. The beautiful pour-over soups blend delicious flavors and textures that you won’t soon forget.   

Market Seafood 

Seafood is one of the main attractions at Mott 32. You can expect prime freshness, premium preparation, and large family-style portions. If you love lobster, you’re in luck. They offer their Signature Lobster Ma Po Tofu, Wok-Fried Maine Lobster, and Australian Lobster.

This menu section also includes two whole fish selections, Pacific garoupa and marble goby, Whole Dungeness Crab, Whole Alaskan King Crab served various ways, and Santa Barbara Prawns.

Fresh Seafood 

The fresh seafood menu section further highlights Mott 32’s ability to create exemplary fresh seafood dishes. I recommend their Signature Smoked Black Cod. Its expert preparation and smokey flavor make it salty, flaky, and rustic all at the same time. 

Another house favorite is the King Prawn, prepared with black pepper, garlic, and soya sauce. For something more inspired, try the Alaskan King Crab Casserole with fish roe and vermicelli.

Additional fresh seafood plates include two scallop dishes, Grilled Sea Bass, Poached Fish Fillet, and three other prawn dishes. 

Abalone & Dried Seafood 

To finish their seafood offerings, Mott 32 serves Braised Whole Japanese Dried Abalone, Braised South African Abalone, and Braised Whole Japanese Sea Cucumber. These plates come with oyster sauce or spicy garlic sauce and are perfect for sharing at the table. All of their abalones come from sustainable sources.


At Mott 32, the meat dishes may not be showcased like seafood, but that doesn’t mean they are less appealing. With premium Wagyu cuts, free-range chicken, and vegan “meats,” you’ll love each elevated dish. 

The most popular selections include unique dishes like Bamboo Charcoal Grilled Lamb Rack, A5 Japanese Miyazaki Wagyu, Stir-Fried Australian M6 Wagyu Sirloin, and Crispy Triple Cooked Wagyu Beef Short Rib. 

For something more familiar and comforting, try General Tso’s Chicken, Wok-Fried Angus Beef with Broccoli, or Free-Range Chicken with Thai Basil. 

For plant-based diets, the vegan “chicken” and “Pork” dishes should not be overlooked.

Rice & Noodles

The rice and noodle dishes at Mott 32 are nothing short of exceptional. Due to expert preparation, the use of fresh vegetables, premium meats, and tasty sauces, these plates are truly remarkable.  

For rice, my top recommendation is Signature Maine Lobster Fried Rice with king oyster mushrooms and edamame. The Alaskan Crabmeat Fried Rice with flying fish roe is a close second. 

For Noodles, you can choose between the Vegas-exclusive Stir-Fried Shanghainese Noodle, Crispy Egg Noodle, and two Wok-Fried Flat Rice Noodle dishes.


The vegetable dishes at Mott 32 are more than just an accompaniment. Many of the plates feature meat, and thanks to top-quality ingredients and delicious sauces, they make excellent main course plates for the table. While each selection is worth trying, the Sauteed String Beans with diced Australian wagyu beef is the most popular. 

Other stand-out options include the Braised Eggplant with minced pork and chili peppers and the Sauteed Asparagus with jicama and ginkgo nuts.

Mott 32’s menu is completed with a collection of unique desserts. With sweet soups, bao buns, and fruity delights, you’ll want to try one of their impressive offerings. My top recommendation is the Sweetened Mango Soup with tofu pudding, pomelo, and sago. It may not sound like a dessert, but its unexpected textures and flavors result in delicately sweet perfection. 


To compliment your meal, Mott 32’s bar presents you with an extensive list of spirits, sake, and wines from around the world. They have a wine mezzanine and a wine room by the bar that enables them to store 6,000 bottles. 

They also offer draft and bottled beer and a curated list of distinct specialty cocktails. One of the most popular, It’s Five O’Clock in Hong Kong, is made with potato vodka, rose liquor, orange sherbert, orange bitters, and strawberry jam.

The chic space features several rooms with stunning design elements, like a grand chandelier above the dining room entry, a neon duck, and a vintage roulette wheel repurposed as a table. If you desire a more intimate dining experience, Mott 32 has five private dining rooms with varying themes.
